[Stuffed Causa] The elite Peruvian dish. The word causa comes from the Quechua word kausay, which means “life” or “sustenance of life”. This dish combines two key Andean crops: potatoes and ají. Potato is one of the contributions of Peru to the world. In the world there are 5000 potato varieties, of which 3000 are clearly Peruvian.
