[Hominy Soup] Patasca or Sopa de Mote is a traditional dish from the Peruvian Andes. It has a high nutritional value.  The word ‘Mote’ comes from the Inca’s language, Quechua, and means ‘broken corn’, as the mote opens up as it’s cooked. This soups is traditionally cooked with mote, tripe, beef, mint, and parsley which gives the soup a rich, meaty and tasty flavor.
